- Filet Mignon800 g
- Penne Grano Durum (Raw)250 g
- Funghi Secchi (In natura)50 g
- Béchamel (White Sauce)300 g
- Garlic2 unit(s)
- Salt and black pepper to taste
- Chives to taste
- Olive oil2 tablespoon
- Nutmeg to taste
- Cut the dried funghi into uniform sizes and let it soak in a little hot water until ready to use.
- Make the béchamel sauce. (Look for the step by step in my recipes).
- Boil 2 liters of water, add salt and cook the pasta. (Remove the dough whenever it is al dente).
- Mince the garlic (very small) and sauté it with olive oil. When it starts to brown, add the secchi mushrooms. Add the béchamel sauce and a ladle of the pasta cooking broth.
- Season the sauce with nutmeg and freshly ground black pepper. Adjust the salt and let the sauce thicken (thick a little). Mix the penne and finish with finely chopped chives.
- Filet mignon: Cut 4 medallions of 200g each and season with freshly ground pepper + salt on one side, turn and put only salt on the other side. Fry in a very hot skillet with a little oil. When the fillet is well browned on the underside, flip over and fry on the other side. Do the same thing on the sides of the fillet. I usually fry 5 minutes on one side and 2 on the other. But that will depend on the height of the fillets.
