- Coarse salt to taste
- Olive Oil2 tablespoon
- Clean the piece of any major grease.
- Spread the oil and salt. Well spread out. I used about 2 tablespoons. Rest for 1 hour
- Seal in a frying pan or pan on all sides until it forms a crust.
- To remove. Wrap in aluminum and bake for 1 hour over medium heat at 200°C.
- Wait for it to cool and serve.
- As an option, you can make a sauce. When removing the meat from the pan, add chopped garlic, 1 glass, 200ml of white wine and 100ml of Heavy cream.
