- Alcatara500 g
- Dry red wine or wood100 ml
- Onion1 unit(s)
- Garlic3 unit(s)
- Margarine150 g
- Corn starch2 dessert spoon
- Champignon1 to taste
- Make the rice to your liking, when it's ready add the cream, mozzarella and mushrooms, leaving it very creamy, chef's tip, if you want to make it creamier add 1 cup of milk. Reserve.
- Season the alcatara with garlic, black pepper, sweet paprika, salt to taste. In a frying pan, fry the meat in a spoon of butter or olive oil, put it to its point, tip leaves a little rare. Reserve.
- Madeira sauce: in this recipe I make the sauce. In a pan, put butter and brown the onion, then the garlic, put the corn starch and mix well until it becomes a cream, without letting it blister, then add the wine and mix well until it becomes a not too thick cream and turn off the fire.
- Assemble a plate with the rice, place the meat and then the wood sauce.
