- Coarse salt to taste
- Sprinkle coarse salt all over the top of the meat.
- Then turn around and go to the other side.
- Put it in a pressure cooker that fits the Pernil lying whole.
- Put it in the pan and as soon as it starts to get pressure, leave it for 30 to 40 minutes in the pressure. Then open the pan if there is water, remove everything and put it back in. If it is already golden, just turn the other side and wait for it to brown.
- Then just serve with the side dishes of your choice.
