- 1 piece of Pernil of about 1 kilo and a half1 kg

- Chimichurri0 to taste
- Salt0 to taste

- Season and leave to marinate overnight. Preheat the oven, cover with aluminum foil and place in a low oven for 1 hour.
- Meanwhile, take some potatoes and pre-cook them with a little salt until al dente. Drain the potato season with a little more salt, rosemary, chimichurri and olive oil. Mix and play in the form. Remove the aluminum foil and place on medium heat (200°) for about 20 minutes. Then just turn on the grilll and leave for 10 minutes on each side. Serve with rice and a salad of leaves.
