- Orange broth2 unit(s)
- Lemon juice3 unit(s)
- Dried Rosemary1 tablespoon
- Salt, garlic and pepperoni to taste
- Onion1 unit(s)
- Tomato2 unit(s)
- Fine herbs1 tablespoon
- Pork lard1 tablespoon
- Mix the orange juice with the lemon juice. Add garlic, salt, pepperoni, rosemary, fine herbs, chopped tomato and onion, pork bath. Mix well.
- Take the shank and (carefully) poke holes with the knife all over the shank. Take the seasoning and put it on the profile.
- Place the ham with the seasonings in a bag and leave to marinate for 30 min.
- After that time, place the seasoned ham in a shape and cover it with aluminum foil. Bake at 200° for 1 h.
- Remove the aluminum foil and let it brown to your liking. Cut and serve.
