- Potatoes to taste
- In a pot prepare the seasoning by mixing the lemon juice, orange juice, olive oil, salt, pepper, pepperoni, green smell and garlic cloves.
- Place the shank in a roast and throw the seasoning over it. Marinate for as long as possible (at least 2 hours).
- Preheat the oven to 200°, cover the shank with aluminum foil and bake for about 1 hour and 30 minutes. Water the shank every 30 minutes with the marinade broth.
- Remove the foil, place the potatoes around the shank and bake for another 1 hour, more or less, in the oven at 230°.
