- Take the shank and boil it. Then season with the mustard, salt, lemon juice, minced garlic and oregano and take it to the fridge in a large bowl with a lid overnight. Place the shank to bake in a baking dish sprinkled with oil or olive oil, the oven temperature should be 180° and the estimated baking time is 2h 30min. During this time that the shank is roasting, take the oranges and make a juice and water the shank always so that it becomes juicy. The potatoes must be peeled and cooked in warm water without pressure, do not leave them too cooked so that when roasting they are whole. Put the potatoes with just 30 minutes left for the shank to be ready along with it in the oven just so they can brown.
