- Roll out the steaks and season them with salt and pepper to taste. Distribute some of the celery and carrot and a piece of sausage. Roll up and tie with culinary twine, forming firm and compact rolls. Heat the oil in a pan or deep frying pan and brown the meat rolls, turning to brown evenly. Add the onion, garlic and wine and let it evaporate. Add the tomatoes and a pinch of sugar and cook with the pan covered, turning occasionally, until the meat is tender and the sauce is thick. If necessary, add hot water little by little so that the sauce does not dry out. Remove the string and serve the rolls with a little sauce and the puree (if desired, place the puree in a piping bag and decorate the plates).
- Mashed potato Mix the potato with the milk and salt to taste. Cook over medium heat, stirring constantly, for 5 minutes. Add the cream, reduce the heat and stir until warmed through (about 3 minutes).
