- Fillet cut into strips200 g
- Onion3 tablespoon
- Extra Virgin Olive Oil2 tablespoon
- Sweet paprika5 g
- Cognac1 tablespoon
- Fresh tomato6.5 g
- Fresh Champignon50 g
- Milk100 ml
- Fresh cream100 ml
- Sugar to taste
- Salt to taste
- Black pepper to taste
- Chop the onions into cubes.
- Heat the skillet well with oil.
- Add the meat, let it brown and sear.
- When golden, add the chopped onion, sweet paprika, cognac and mushrooms and let reduce.
- Add fresh tomato sauce.
- Put the entire contents in a pressure cooker for 10 minutes with a little water.
- After 10 minutes, turn off the pressure cooker and let it cool until all pressure is released.
- Turn the heat back on and add the fresh cream.
- Add the salt and stir constantly until the sauce thickens.
- Add a little sugar to finish.
- Serve immediately.
