- Round lizard1500 g
- Garlic30 g
- Pepperoni Pepper1 teaspoon
- Dry white wine200 ml
- Onion cream (package)1 unit(s)
- Champignons200 g
- Black beer1 can(s)
- Olive oil2 tablespoon
- Water100 ml
- Salt to taste
- Pierce the lizard in the middle, insert the pepperoni and pierce the side of the lizard for the seasoning to enter. Crush or grate the garlic and mix it with the pepperoni, the wine and a small pinch of salt. Place the lizard in a plastic bag and the seasoning and leave to marinate for about 2 hours. After being marinated, place the oil in a pan and sear the lizard until golden. Place the lizard in a pressure cooker and set aside. In the same pan that the lizard was sealed, place the stout, creamed onion and water. Stir until the onion cream dissolves and put everything in the pressure cooker along with the lizard and let it cook under pressure for 40 minutes. Take the lizard out of the pan, put it in a container to your liking and slice. Place the mushrooms in the beer sauce and cover the meat. Tip: don't put too much salt in the marinade, as the onion cream is already very salty.
