- Blend all the ingredients in the blender, then poke the loin a few holes so that the spice mix gets well, then place the loin inside a transparent bag or whatever you have available, put the mix inside the bag already with the loin inside and leave rest for at least 2 hours.
- After two hours, take a roasting pan and place three layers of aluminum foil, take the loin with the mixture and place it inside the roast and close it with aluminum foil, tightly closed, without letting the liquid out.
- Preheated oven for 10 minutes, then put the loin to bake for 2h30, 200°C.
- After 2h30, remove the loin from the aluminum, throw the aluminum away, put the loin back in the roasting pan, apply a drizzle of oil (a very generous drizzle, see? Lol, without piranging) and bake until golden brown. And end! Your loin is ready, now just decorate and devour
