- Beef rib in pieces1 kg
- Salt to taste
- Chopped Onion180 g
- Minced garlic10 g
- Lemon juice1 unit(s)
- Tomatoes, diced2 unit(s)
- Bay leaves2 unit(s)
- Yellow cassava peeled and cut into pieces800 g
- Chopped Parsley to taste
- Sliced chives to taste
- In a large pan, add the oil and let it heat up.
- Season the rib pieces with salt. Brown them, in small portions, in the pan. Reserve.
- In the same pan, sauté the onion and then the garlic.
- Add the lemon juice and mix.
- Add the chopped tomatoes, rib pieces and bay leaves to the pan.
- Cover with water and cook for about 90 minutes, or until the meat is very tender.
- Add the cassava and let it cook with the lid on until it becomes soft.
- Correct the salt and texture of the broth.
- If necessary, with the help of a slotted spoon, mash one of the cassava pieces to thicken the broth.
- Add the parsley and chives, check the salt again and serve in a deep dish.
