Tenderloin with citrus sauce

  • Onion1 unit(s)
  • Garlic4 unit(s)
  • Yellow pepper1 unit(s)
  • Leek1 cup
  • Rosemary to taste
  • Black pepper to taste
  • Salt to taste
  • White wine200 ml
  • Butter2 tablespoon
  • Honey3 tablespoon
  • Sicilian Lemon1 unit(s)
  1. In a pressure cooker put oil and butter and add the loin. Let it brown well on both sides. Season with salt and pepper.
  2. Cut the garlic, onion, pepper and leek finely chopped. Add to the loin and let it cool.
  3. After sautéing, add the white wine and let it cook for a few minutes. Then add water to cover the loin and rosemary leaves. Let it cook under pressure for 40 minutes.
  4. Once cooked, the meat should be tender. Separate the meat from the broth.
  5. In another hot pan, add the honey and broth. Let it reduce until it has the consistency of sauce and add the juice of half of the Sicilian lemon.
  6. Decorate the dish with the other half of the Sicilian lemon and the rosemary leaves.
