- Method of preparation Gather all the ingredients In a container, mix all the marinade ingredients, except the meat, the bay leaf, the sage and the coarse salt; Place the meat in the marinade and incorporate well, passing the sauce along the entire length of the termite; Place the meat with the marinade in the refrigerator, covered with a lid or plastic wrap, for at least 3 hours or overnight; Heat a pressure cooker, add the meat, bay leaf, sage and rock salt. Sear the meat on both sides, add 700 ml of water (boiling) and cook, under pressure, for 40 minutes over medium heat; Wait for the pan to lose pressure, transfer the meat to a baking dish, cover with aluminum foil, bake in a preheated oven at 200°C for 40 minutes; Remove from the oven, let rest for 10 to 30 minutes and serve.
