- Cook the beans with the garlic, salt until al dente.
- Cut the tripe into strips and put it to boil with the lemon.
- In the blender place the tamate, onion, coriander, pepper and blend.
- In a pressure cooker, place the oil, extract salt and the liquefied mixture, place the already boiled tripe without the water, saute.
- Add water to cover the ingredients, close the pressure cooker, let it cook for 20 minutes.
- After the time, open the pot after the pressure comes out, and put the beans, let it cook a little longer to incorporate the ingredients and reduce the broth.
