- fresh mint1 cup

- olive oil2 tablespoon
- boiled spinach1/2 cup
- small carrot1 unit(s)
- small zucchini (without the core)1 unit(s)
- small onion1 unit(s)
- pumpkin puree1 cup
- Wheat for hydrated kibbeh250 g
- Process the onion with the oil and seasonings until it forms a paste.
- Mix with the pumpkin puree and add the grated zucchini and carrots, as well as the chopped spinach and mint.
- Place your mixture on a tray greased with olive oil and bake in an oven at medium temperature (180°) for approximately 40 minutes or until golden.
- Note: this recipe yielded 2 platters of approximately 20 cm and the other one I froze for 2 weeks
