- Arborio rice2 cup
- Vegetable broth2 l
- Dry white wine100 ml
- Diced Bacon150 g
- Gorgonzola cheese100 g
- Chopped Onion2 tablespoon
- Cold butter1 tablespoon
- Salt, black pepper and parsley to taste
- In a hot skillet, add the bacon and fry in its own fat. Reserve 1/3 of the bacon to finish the risotto.
- In the same skillet, brown the onion, add the rice and fry well.
- Add the white wine, salt and pepper. Once the wine has evaporated, add the broth little by little until the rice is al dente. Finish with the butter, gorgonzola cheese and green smell.
