- Onion1 unit(s)
- Olive oil1 to taste
- Salt1 to taste
- Nuts100 g
- apricot100 g
- Pork Filet Mignon1 kg
- Lemon Pepper1 to taste
- Water2 l
- Barbecue Sauce200 ml
- Sauté the onion with the oil
- With the sauteed onion, add the walnuts and the apricot to fry
- With the onion, walnuts and apricot sauteed, add the black rice and salt
- With the braised rice, add the water until it covers the rice and let it boil over low heat until the rice cooks, this takes about 40 minutes
- Season the Pork Filet Mignon cut into medallions with lemon pepper and salt
- In a frying pan, fry the medallions to the point you like and set aside.
- Return the medallions to the skillet and drizzle with the barbeuce sauce and a little water and let the sauce reduce and you can now serve with the rice
