- To make breaded eggplant, start by preparing all the necessary ingredients.
- Prepare the dough by mixing the flour, salt, black pepper and yeast.
- Incorporate a thread of olive oil into the mixture.
- Separately, beat the egg whites and add them to the dough mixture you are preparing.
- Now prepare the eggplant. Wash and cut the eggplant into slices about two centimeters thick.
- Pass the eggplant through the dough that you had previously prepared.
- Fry each eggplant slice in a skillet with very hot oil.
- Before serving, place the eggplant on a paper towel to remove excess oil and enjoy plain breaded eggplant!
