- Arborio rice or carnaroli2 cup
- Dry white wine150 ml
- Chopped Onion2 tablespoon
- Peeled Tomato200 g
- Vegetable broth2 l
- Fresh Mozzarella Cheese Balls to taste
- Grated Parmesan Cheese to taste
- Cold butter1 tablespoon
- Basil Leaves to taste
- Salt and black pepper to taste
- In a hot frying pan with a drizzle of olive oil, brown the onion and sauté the rice, add the wine and wait for it to evaporate. Put the peeled tomato, a pinch of sugar, salt and black pepper.
- Start by adding the vegetable broth little by little and stirring constantly, repeat the process until the rice is al dente. Turn off the heat, add the cold butter and grated Parmesan cheese and mix well.
- Finish with the mozzarella cheese balls and the basil leaves.
