- Spaghetti or noodles500 g
- Egg Yolks8 unit(s)
- Diced Bacon300 g
- Grated Parmesan1 cup
- Cooking water to taste
- In a pan, bring water to boil with a generous pinch of salt and then put the pasta to cook according to the cooking time on the package. But count about 2 minutes less, to finish in the skillet.
- During this time, on a platter, beat the two egg yolks with the parmesan and black pepper. In case it takes time to get a point, add a spoonful of the cooking water and stir until uniform.
- Now with a frying pan, sauté the bacon until it becomes quite crispy, then take it out and sauté the pasta al dente in the bacon fat.
- Finish by removing the pan from the heat and vigorously adding the previously made mixture and adding cooking water, if necessary. The point will be when you have a very smooth and creamy sauce.
- Then just add the braised bacon on top and serve next.
