- Pasta of your choice300 g
- Fresh Sour Cream250 ml
- Finely Grated Parmesan Cheese100 g
- Egg Yolk4 unit(s)
- Diced Bacon200 g
- Ground Black Pepper to taste
- Salt if needed to taste
- Finely chopped parsley to taste
- Sauce preparation: Fry the bacon, remove excess fat. In a separate bowl, place the cream, the finely grated cheese, the egg yolks, the cooled bacon, parsley. Mix well and adjust salt and pepper. Leave the sauce reserved.
- Dough preparation: Bring water to boil, pasta needs water to cook so use 1 liter of water for 100 g of pasta.
- When the water is boiling, add enough salt to taste like sea water. Put the dough, do not put oil or olive oil in the water. Mix lightly so it doesn't stick.
- Cooking time will vary, always check the cooking time on the package, and cook for 2 minutes unless the package says. The pasta will finish cooking in the sauce.
- When the pasta is almost cooked, heat a large skillet or pan, put a spoon of butter. Keep the heat low. The skillet must not be too hot.
- Remove the pasta from the water using a clothespin and place directly in the pan.
- When you see that the sauce has already incorporated into the pasta and the cheese has melted, your pasta is ready.
- Serve! If you want to finish, sprinkle parsley or cubes of fried bacon.
