- Parmesan100 g
- Salt and black pepper to taste
- Bacon200 g
- Bring pasta to cook in boiling salted water
- Fry the bacon and set aside
- For the sauce, mix the yolk, egg, parmesan, salt and black pepper and to emulsify and season the egg yolks, use a ladle of pasta cooking water
- Drain the pasta but do not wash it, add the sauce to the pasta and finish with the bacon and parsley
