- Cassava1 kg
- Egg1 unit(s)
- Margarine1 tablespoon
- Salt to taste
- Leek2 unit(s)
- Wheat flour2 cup
- grated cheese to taste
- Peel the cassava, cut into pieces and put it to cook. As soon as the water starts to boil, add the salt.
- When the cassava is very soft, drain and mash it with a potato masher.
- Add the egg, flour and margarine and mix and knead well.
- Place the dough on the table, roll and cut
- Bring to a boil in a pan with water, a drizzle of oil and a pinch of salt.
- Put the gnocchi little by little, when it starts to rise just remove it and put it in a bowl
- In a skillet, sauté the leek with butter, salt and seasonings to taste.
- Add to the gnocchi, sprinkle the grated cheese on top and serve.
