- 1/2 cup of chicken broth (tea) or water 1/2 a tablespoon of oil 1/2 tablespoon of butter 1 cup of wheat flour 50 grams of cheese dish iced water for breading breadcrumbs for breading and oil for frying1/2 tablespoon
- In a medium saucepan, place the chicken stock (or water), oil, butter and place over high heat. When it boils, remove from heat, add the flour all at once and mix well. Return to low heat, stirring for 3 minutes. Remove from heat and work the dough, still hot, mixing well, until smooth and uniform. Reserve. Cut the cheese into 1 cm cubes. Start by cutting into slices (1 cm); cut each slice into strips (1 cm); and cubed strips. Reserve. With a teaspoon, take a portion of the dough and form a ball. Stuff the ball with a cube of cheese and close tightly. Roll it up again in your hands to give it shape. Repeat the procedure with all the dough and the cheese. Place the ice water in one bowl and the breadcrumbs in another. Dip each ball through the water and then through the flour. Reserve. In a medium pan, place the oil and heat it up. When the oil is hot, carefully add the balls little by little to fry. With a slotted spoon, turn the balls to brown them on all sides. Remove the balls with a slotted spoon and transfer to a plate lined with paper towels. Serve immediately or store in the refrigerator. When serving, heat in the oven at medium temperature.
