- 2 tablespoons of olive oil 1 medium onion, sliced into small cubes 2 cloves of garlic, minced 2 tablets of chicken stock 1 chicken breast, minced 2 cups of rice 1 tomato without skin and without seeds, chopped 1 red pepper, sliced into small cubes 4 cups of boiling water 2 tablespoons ( soup) of chopped parsley2 tablespoons of chopped green chivesCorn and peas and raisins to taste🤩1 to taste
- Preparation mode: Fry the onion and garlic in a pressure cooker. Add the chicken broth and the chopped chicken. Fry the chicken until golden. Add the tomato, pepper, corn, pea and rice and saute everything for 2 minutes. Add the water to the mixture, cover the pan and let it cook for 3 minutes, after the pressure starts. After that, turn off the heat and let the pressure release naturally. Then, place the risotto on a platter, sprinkle with parsley and chives and serve immediately.
