- Chickpea flour200 g
- Water400 ml
- Extra Virgin Olive Oil4 tablespoon
- Fresh chopped coriander1 dessert spoon
- Sicilian lemon zest1 unit(s)
- Salt to taste
- Sift the flour into a bowl, make a volcano shape and add the water little by little, mixing with a kitchen whisk until everything is completely incorporated.
- Add the olive oil, coriander and lemon zest and incorporate everything.
- Heat a non-stick frying pan and with the help of a paper towel, spread oil over the entire surface. Pour a ladle of the batter by tilting and shaking the pan to cover the entire bottom and have a very thin pancake. Leave it for a minute without stirring and then carefully lift the edges of the pancake with a spatula until it comes off completely. Turn to the other side, the first one should have a light golden color. Let it bake until you have golden spots on the other side too.
- Transfer to a plate and cover with a clean cloth. Repeat the operation until all the dough is consumed. The number of pancakes will depend on the size of your skillet. Mine was 10 units.
