- Conchiglione250 g
- Olive oil to taste
- Crushed Garlic Clove4 unit(s)
- Raw Spinach3 cup
- Salt to taste
- Black pepper to taste
- crumbled ricotta3 cup
- Grated Parmesan1/2 cup
- Sicilian lemon (squeezed)1/2 unit(s)
- Sicilian lemon zest1 unit(s)

- Peeled Tomato (can)2 unit(s)
- Water (in tomato can)1/2 unit(s)
- Filling: Saute garlic in olive oil and add the spinach, season with salt and pepper and sauté until wilted. In a bowl, crumble the ricotta, add the parmesan. Roughly chop the already sautéed spinach and mix with the ricotta. Add the squeezed lemon and the zest. Mix it all up and set it aside.
- Sauce: Saute a finely chopped onion in olive oil and add the cans of peeled tomatoes and water. Season with salt, black pepper and basil and let it simmer for about 15 minutes on low heat.
- Pasta: Cook the conchiglione for 2 or 3 minutes less than what the package says so it will firm up. Stuffing with the ricotta and spinach that were reserved. Place in the skillet where you made the sauce (which can go in the oven) or on a baking sheet (in this case, pour the sauce and place the conchigliones on top). Finish with more grated Parmesan and bake until the cheese is browned, about 25 minutes.
