- Butter80 g
- Arborio rice200 g
- White wine60 ml
- Chicken, vegetable or beef broth1 unit(s)
- Freshly Grated Parmesan Cheese1 cup
- Thinly slice two onions into half moons
- In a large pan or skillet, add olive oil (quite a bit) and a tablespoon of butter.
- Add onion and start stirring, stirring until golden and caramelized
- Add 200g of arborio rice to the onion pan and fry for 1 minute
- Add 60ml of white wine and stir constantly until all the wine has evaporated.
- Gradually add the broth, stirring constantly, adding more as it dries (2 or more ladles at a time if necessary)
- When the rice is cooked, approx 20 min dps, add a last ladle of broth.
- Add 40gr of butter and 1/2 cup of freshly grated Parmesan, incorporate well, stirring constantly
- Hit the salt and pepper of the kingdom and it's ready
- If you want, you can top it off with balsamic cream.
