- Separate the whites from the yolks. Whisk the egg yolks with the butter and sugar in a stand mixer until light and creamy.
- Add the milk, wheat and essence, mix until smooth and set aside.
- Beat the egg whites and add them to the dough, along with the yeast, little by little, mixing carefully so as not to lose any air.
