- Eggplant flour6 tablespoon
- Olive oil2 tablespoon
- Water100 ml
- Mozzarella cheese to taste
- Oregano to taste
- Homemade tomato sauce to taste
- In a bowl, mix the eggplant flour, olive oil and water until you get a mousse-like texture.
- Arrange the dough and spread it out on a baking sheet lined with parchment paper until it forms a circle.
- Bake at 200°C for about 20 minutes.
- Remove the dough from the oven and spread the tomato sauce on top.
- Arrange the slices of mozzarella and finish with a little oregano.
- Return to the oven until the cheese melts.
