- Fresh grated Parmesan50 g
- Boiling water2 l
- Salt2 tablespoon
- Cook the pasta in salted water according to the instructions on the package, 1 minute earlier than indicated.
- Melt the butter in a pan.
- Add the pasta with a little of the cooking water.
- Add the grated parmesan and stir well.
- The cheese melts, the butter is incorporated into it and the starch from the cooking water causes everything to be emulsified into one.
- Serve with more grated cheese on top
