- Eggs4 unit(s)
- Oat bran4 tablespoon
- Tapioca4 tablespoon
- Baking powder1 teaspoon
- Salt to taste
- Cinnamon powder to taste
- Ripe dwarf banana, cut into slices2 unit(s)
- Mozzarella cheese slices6 unit(s)
- In a blender, beat the eggs
- Add the oats and beat again.
- Add the tapioca and a pinch of salt and beat until smooth.
- Finally, add the baking powder and beat for just a few seconds.
- Preheat a non-stick skillet and set over low heat.
- With a ladle, place the dough in the skillet one by one.
- Wait until golden and turn aside.
- For each pancake add two slices of mozzarella cheese, sliced banana and ground cinnamon to taste
- Wait for the cheese to melt and that's it đ serve right away đ
- Repeat the process until the dough runs out đ
- Tip: I made it in a medium skillet and it yielded 3 medium pancakes. If your frying pan is small, it will yield about 6 small pancakes and you can vary the stuffing as you prefer đ
