- Wheat Flour400 g
- Semolina40 g
- Egg yolk8 unit(s)
- Olive oil/soybean oil to taste
- Salt to taste
- On a clean table or bench mix the flour, semolina and salt and make a well in the middle.
- Pour the egg yolks into the hole and place a drizzle of olive oil on top.
- Incorporate the yolks into the flour slowly, knead the dough just by folding and squeezing it, when it becomes a smooth and homogeneous dough, just pack it in plastic film and let it rest for 30 minutes.
- Remove from the plastic film and open with a roll of pasta from the middle up or from the middle down, if you have the machine your work will be easier, but if you don't have it, just use the knife to cut it to the size you want.
- Her cooking time is shorter than dry pasta on the market, so pay attention.
- In my pasta recipe I used garlic, oil, shrimp and sage only.
