- Remove the skin from the cod and let it desalt for 48 hours. Then, in a pan, put water and take the cod to cook. Drain and reserve the broth. Peel the potatoes and cook them in the cod broth. While the potatoes are cooking, place the cod in a bowl, remove the rest of the skin and bones and beat well, with a socket, to leave it shredded. When the potatoes are cooked, pass through the potato masher and set aside. In a skillet, add oil and garlic and let it brown. Add the potatoes to the beaten cod and, after that, add the oil and garlic sauté to this mixture. Knead well, add the eggs, the beaten parsley and, again, knead well. If necessary, adjust the salt. Shape the balls and, if you want, this is the time to freeze them. If you are going to make it right away, fry in very hot oil and serve when they are golden.
