- For the white sauce: milk2 cup
- Butter2 tablespoon
- Wheat flour2 tablespoon
- Chopped Onion2 tablespoon
- Salt and nutmeg to taste
- Leek1 cup
- Wash the potatoes, peel and pierce them with a fork. This will help to cook evenly.
- Place in a glass or porcelain bowl and cover with a plate. Microwave on high power and cook for 5 minutes. Turn the potatoes over and cook for another 5 minutes.
- With the help of a potato masher, while the potatoes are still hot, mash them in a bowl. If you don't have a potato masher, mash it with a fork. The important thing is to do this with them still hot so that they have a better texture.
- Mix the yolk, Parmesan, season with salt, pepper and nutmeg to taste. Add half of the flour and mix. Add the rest of the flour little by little until you get the point.
- To check the point, with a clean hand, make balls with the dough. If it doesn't stick to your hand, it's ready.
- Flour the countertop and place a ball of dough. Roll up like a snake and cut with a knife every 2 cm.
- In a large pot with 3L of boiling water and 1 tablespoon of salt, place about 15 pieces of gnocchi. When they rise to the surface, remove them with a slotted spoon. Reserve.
- Heat a pan with the butter, brown the onion and the finely chopped leek. Add the flour and cook for 2 minutes. Gradually add the milk, mixing constantly to avoid lumps. Season with salt, pepper and nutmeg to taste. Place the gnocchi with the sauce and heat to serve.
