- Water250 ml
- Butter cut into cubes100 g
- Wheat flour150 g
- Large eggs4 unit(s)
- Coarsely grated Comtè cheese170 g
- Salt, pepper and nutmeg to taste
- Preheat the oven to 200 degrees. In a medium saucepan, bring the water, milk, butter and salt to a boil. Add the flour (all at once) and stir well, cook for about 5 minutes, until smooth and starts to stick to the bottom. Remove from heat, transfer to a large bowl (or mixer) and wait about 5 minutes to cool slightly. Add the eggs, one by one, incorporating the previous one well before adding the next one. Add the cheese and mix well.
- On a baking sheet lined with parchment paper, place small circles of dough, leaving a few centimeters between them or, if you want something prettier, use a bag and a thick pastry tip.
- Sprinkle a little more cheese and bake for about 20 minutes, until golden.
