- Wheat flour500 mg
- Salt10 mg
- Organic Dry Yeast5 mg
- Cold water350 ml
- Mix all the ingredients in a bowl with a spoon and then with your hands. No need to knead. Cover with a cloth and let it rest for 10 minutes.
- Folds: Pull the dough, making folds towards the center of the dough, 10 times. Cover the dough and let it rest for 10 minutes. You will do this process 4 times. Once the folds are finished, cover the bowl with a cloth and let it rest for another 1 hour.
- After resting for 1 hour, transfer the dough to the floured bench and shape. This bread must be baked in a pan with a lid (glass or ceramic) Grease the pan (I used olive oil) and transfer the dough to the pan. Let it rest for another 45 minutes. Preheat your oven to 250ºC.
- Before taking it to the oven, make a cut on the top of the dough and sprinkle with flour. Place the covered pan in the oven at 220ºC for 25 minutes. Remove the lid and cook for another 20 minutes or until golden.
