Homemade pasta with bolognese sauce

- Wheat flour500 g
- Egg Yolk5 unit(s)
- Thin pepperoni4 unit(s)
- Blumenau sausage1 unit(s)
- Onion2 unit(s)
- Garlic3 unit(s)
- Dry red wine100 ml
- Salt to taste
- Black Pepper to taste
- Oregano to taste

- Tomato sauce1 unit(s)
- Sugar1 tablespoon
- To prepare the dough, use 1 egg yolk for every 100g of wheat flour. If necessary, use the egg white to reach the desired consistency. Combine all the ingredients in a bowl and start mixing everything.
- On a table or bench, sprinkle flour and start kneading the dough until it is firm enough to stretch.
- Stretch the dough and cut it according to your preference, in my case I prefer the noodle cut.
- To make the sauce, fry the sausage and pepperoni together in a large pan. After fries, set aside. Cut the onion, tomato and garlic into cubes. Fry the onion until golden, add some of the wine to the pan and stir until it evaporates a little. Fry the garlic together until golden and then fry the tomatoes too. Now add the whole package or jar of tomato sauce and the rest of the wine. Put the sugar spoon, adjust the salt, pepper and the desired amount of oregano in the sauce. Wait for the sauce to reduce a little to intensify the flavor and it's ready.
- To cook the pasta, boil water with plenty of salt, remembering the taste of sea water. With the boiled water, add the pasta little by little and remove when it is al dente, around 5 minutes (it may vary according to the thickness of your pasta)
- Combine the pasta with the sauce and it's ready to serve.
