- Enough Wheat Flour + or -3 cup
- Grated cheese for sprinkling to taste
- Water for cooking potatoes and gnocchi2 l
- Salt to taste
- Peel the potatoes and cut them to your liking. Put them all in a medium pot with water to cook over high heat. When it starts to boil, add the salt and lower the heat. Let it cook for a little longer and check with a fork if they are soft.
- Turn off the heat, drain all the water, and pass them through a potato masher while still warm. Add the butter, the eggs, mix everything gently, taste the salt (if necessary add a pinch more). Then add the flour and mix until the dough is uniform, but light.
- In a large, clean pot, bring enough water to a boil to cook the gnocchi.
- Sprinkle the place where you are going to work the dough with a little flour and make some rolls the thickness of your thumb, then cut them into small pieces of about 2 or 3 cm each, and place them separately on a baking sheet just sprinkled with flour.
- When the water starts to boil, add a pinch of salt, and dip portions of gnocchi with the aid of a slotted spoon, and as soon as they rise to the surface, remove them by draining the water and place them all in the bowl that will serve. Do this procedure until you run out of dough. Then just add the sauce of your choice and serve with grated cheese!
- Sauce suggestion: bolognese, sugo, pomodoro... etc.
