- Pasta of your choice (I used fidelinho da Gallo)400 g
- Ground beef inside500 g
- Salt to taste
- Black pepper1 coffee spoon
- Smoked paprika1 coffee spoon
- Cumin1 coffee spoon
- Garlic Clove5 unit(s)
- Chopped Onion1 unit(s)
- Chopped tomato1 unit(s)
- Tomato sauce (I used traditional pomarola)1/2 unit(s)
- Grated Parmesan Cheese to taste
- Chopped chives to taste
- Olive oil to taste
- A pinch of sugar (to brown the meat) to taste
- Clean the meat, removing excess fat and cut into squares 3 inches wide and 3 inches long. It can't be too small because it can fall apart in the pressure cooker.
- Gather the garlic, pepper, paprika, cumin and salt in a pot and put the minced meat. Mix well so that all the pieces get the seasoning. Let the meat rest for about 10 minutes. Meanwhile, put the pasta to cook in salted water.
- Drain the pasta when it is al dente, as we are going to finish cooking it in the sauce (this makes a big difference in the dish). Leave it in the colander.
- Take a pressure cooker, put some oil and sugar. When the sugar starts to brown, turns brown, put the seasoned meat. Do not stir for about 5 minutes. After this time, stir the meat to seal it on all sides.
- When the meat releases water, add the onion, tomato, tomato sauce and cover with water. Close the pan and count 15 minutes when the pressure starts. After, open and see if the meat is soft, if not, return for another 5 minutes in pressure.
- Take a deep frying pan and throw the meat with sauce in it. taste. Hit the salt. Take the pasta, run some water over it to loosen it, drain the water and throw the pasta into the sauce. Stir so that all the noodles get the sauce. taste. Hit the salt.
- When the pasta has already mixed well in the sauce, stop stirring, throw the Parmesan cheese on top and the chives and cover the pan. Leave covered and boil for about 2 minutes. Serve immediately!!!
