- Vegetable drink (using oatmeal)1 cup
- Macaroni3 cup
- Cherry Tomato1/2 cup
- Basil sprig1 unit(s)
- Onion1/2 unit(s)
- Garlic Cloves6 unit(s)
- Olive oil6 tablespoon
- Salt to taste
- Black Pepper to taste
- Nutritional Yeast to taste
- Nutmeg to taste
- Clean the vegetables, peel the yams and chop the spinach into smaller pieces (you decide whether to use the stalks too or not)
- Cook the yams and spinach in separate pans for about 10 minutes, until the yams are well softened.
- Let the pasta cook for the time specified on the package.
- While everything is cooking, chop the onion and garlic, cut the cherry tomatoes into 4 pieces lengthwise and remove the basil leaves. Reserve.
- With the help of a blender, beat 4 tablespoons of olive oil, the vegetable drink, the yam, the spinach and the seasonings until obtaining a homogeneous sauce.
- Heat a pan, add the rest of the oil, brown the onion, then brown the garlic, add the sauce, the pasta, saute for about 3 minutes.
