- Cassava300 g
- Wholemeal Flour1 cup
- Egg1 unit(s)
- Spinach190 g
- Garlic Clove2 unit(s)
- Onion25 g
- Sour Cream5 tablespoon
- Corn Starch1 tablespoon
- Milk1/2 cup
- Salt and Olive Oil to taste
- Place the manioc in a pan with water and salt to cook. As soon as it gets soft, remove all the hot water and pass the manioc through a juicer.
- In a bowl put the manioc, the egg and the wholemeal flour and mix well. Until the dough is very homogeneous. Roll up the dough and cut into pieces. Cook the pieces in boiling water until they rise to the surface. Reserve.
- Put a drizzle of olive oil in a pan and add the crushed garlic and diced onion to sauté. Then add the spinach. It has to be well cooked.
- Place the cooked spinach with the milk and cornstarch in a blender or mixer. hit well. Return this mixture to the pan and add the cream, check the salt and let the sauce thicken a little before adding it to the gnocchi. Serve warm.
