- Noodles (preferably a long pasta)500 g
- Fresh cream*400 ml
- Sicilian lemon (zest and juice)1 unit(s)
- Grated Parmesan Cheese1 cup
- Onion1 unit(s)
- Salt, black pepper and seasonings to taste
- Cook the macaroni according to the instructions on the package. Drain, rinse in cold water and set aside.
- In a pan, sauté the onion in a little oil and salt until golden. Add the cream and lemon zest, stir well and let it simmer for 5 minutes (stirring occasionally so it doesn't stick).
- Turn off the heat, add the lemon juice and Parmesan cheese and mix well. Taste and add salt if needed. Serve with black pepper to taste.
- * you can use two cans of cream without the whey. The sauce becomes more consistent, so in this case reserve 1 cup of the pasta cooking water and add it gradually to the sauce if necessary.
