- Knit flour3 cup

- Olive oil1 to taste
- In a large bowl, mix the flour with the salt and yeast. Make a hole in the center, add the oil and mix with your fingertips to incorporate, until it forms a crumb.
- Add half of the water and, with your hands, mix well. Gradually add the rest of the water, mixing until a wet dough forms. Transfer the dough to the lightly floured countertop and knead for just 3 minutes, until it is very smooth – at first it may stick to your fingers, but during the kneading it becomes consistent and smooth. Avoid adding more flour, the pizza may get tough.
- Form a cylinder with the dough and, with a knife or a baker's spatula, divide it into 6 equal pieces. Shape into balls and cover with a damp dish towel so it doesn’t dry out during the preparation of the discs – the dough has chemical yeast, so it doesn’t need a rest to rise
- Take a large non-stick skillet to heat over medium heat (if you prefer, use an iron skillet for pizzas with more toasted points).
