- Ripe tomatoes, peeled and seeded1 kg
- Chopped Onion1 unit(s)
- Garlic Cloves5 unit(s)
- Olive oil8 tablespoon
- Basil leaves30 unit(s)
- Chopped walnuts8 unit(s)
- Grated Parmesan250 g
- Salt and Black Pepper to taste
- Pomodoro: In a large skillet place 5 tablespoons of oil and the onion. Let it wither. Then add the garlic and let it fragrant. Then add the fresh or peeled tomatoes and let them dissolve in the oil. Add water little by little to remove the acidity of the sauce. Season with salt and freshly ground black pepper. Reserve.
- Pesto sauce: With the help of a pestle, crush the basil. When the leaves start to release liquid, add 3 tablespoons of olive oil and half of the Parmesan. Now gently macerate again. Add the walnuts and season with salt and pepper until obtaining a thick cream. Cook the penne al dente. Gently mix the pasta with the sauce and finally the Pesto and the rest of the Parmesan.
