Ingredients: 300 g Penne (or fusilli, tie); 150 g Broccoli; 150 g Gorgonzola; 100 g Sour cream; 100 g Apricot; 100 g Sweet grape tomato; 1/2 unit(s) Onion; 1 unit(s) Rosemary (branch); 2 unit(s) Garlic (clove); 80 ml Olive oil; to taste Salt and pepper; 100 g (OPTIONAL - non veg) Bacon

Penne with gorgonzola, vegetables and apricot sauce

Tempere os tomates em uma assadeira pequena com sal e pimenta a gosto. Depois, coloque 2 dentes de alho amassados com casca e 1 ramo de alecrim. Regue tudo com aproximadamente 80 ml de azeite e leve para assar no forno pré-aquecido a 180º por 30 minutos.

Season the tomatoes in a small roasting pan with salt and pepper to taste. Then put 2 cloves of crushed garlic with the peel and 1 sprig of rosemary. Drizzle everything with approximately 80 ml of oil and bake in a preheated oven at 180º for 30 minutes.

Quebre os brócolis em pequenos floretes, aproximadamente do mesmo tamanho que os tomates. 
Ferva uma panela grande com água e cozinhe o brócolis entre 3 a 5 minutos com ½ colher de sopa de sal. Com uma escumadeira retire e passe na água corrente para resfriar.

Break the broccoli into small florets, about the same size as the tomatoes.
Bring a large pot of water to a boil and cook the broccoli for 3 to 5 minutes with ½ tablespoon of salt. With a slotted spoon remove and pass under running water to cool.

Aproveite a água de cozimento do brócolis e cozinhe a massa pelo tempo indicado pelo fabricante. 

Enjoy the broccoli cooking water and cook the pasta for the time indicated by the manufacturer.

(Opcional non veg BACON) Pique o bacon em cubos pequenos e leve para fritar em uma frigideira, em fogo médio até soltar a gordura. Acrescente os damascos picados também em cubos e refogue até o bacon ficar crocante. Retire da panela e reserve. 

(Optional non veg BACON) Chop the bacon into small cubes and fry in a skillet over medium heat until the fat is released. Add the chopped apricots also in cubes and sauté until the bacon is crispy. Remove from pan and set aside.

Numa frigideira grande refogue a cebola cortada em cubos pequenos com um fio de azeite. Junte o bŕocolis escorrido e refogue por mais 3 minutos.

In a large skillet, sauté the onion cut into small cubes with a drizzle of olive oil. Add the drained breadcrumbs and sauté for another 3 minutes.

Adicione o gorgonzola picado e espere começar a derreter. Depois, adicione a massa e 1 concha da água do cozimento até esquentar bem. 

Add the chopped gorgonzola and wait for it to melt. Then add the pasta and 1 ladle of the cooking water until hot.

Numa travessa coloque a massa com molho de gorgonzola, brócolis, os tomatinhos assados, damasco picado, e bacon (opcional)

On a platter, place the pasta with gorgonzola sauce, broccoli, roasted tomatoes, chopped apricots, and bacon (optional)
