- Wheat flour200 g
- Eggs2 unit(s)
- Salt to taste
- Pumpkin neck300 g
- Black pepper to taste
- paprika to taste
- Butter100 g
- White wine150 ml
- Basil to taste
- Grated Parmesan to taste
- Olive oil to taste
- We start with the pumpkin puree, place the chopped pumpkin in a pan, with salt and drizzle with olive oil. Cover the pan and let it cook for 10 min. When soft, beat with a mixer and set aside until cool.
- In a bowl add the flour, eggs, salt as much as a drizzle of olive oil, mix until you get a homogeneous mass, take it to the fridge for at least 20 min.
- Open the dough and close it with the puree, mold the tortellines as in the video. Cook them in a large pot of water.
- In a frying pan, add the butter, the basil and then the cooked tortellines, add the white wine, the black pepper, finish with grated parmesan and serve.
