- Purple Sweet Potato500 g
- Wheat140 g
- Egg1 unit(s)
- Salt to taste
- Sour cream200 ml
- Parmesan100 g
- Mozzarella100 g
- Gorgonzola100 g
- Chilled unsalted butter100 g
- Black pepper to taste
- Let's start with the fonduta. Heat the cream until almost boiling. Add the cheeses and lower the heat. Stir until the cheeses are completely melted. Season with pepper. Turn off the heat and mix in the cold butter. Place in a blender or mixer and process. Reserve
- Bake the potatoes in the oven until tender. (I usually wrap it in aluminum foil, I use an oven to capture as little water as possible)
- Peel and mash with a fork
- When it is warm, add the egg and mix well.
- Gradually add the wheat flour until it becomes moldable.
- Make a roll and cut into standard pieces
- Boil water and add the gnocchi gradually, as soon as they float, they are ready.
- Just finishing with the fonduta is good appetite
